At the same time, Zhang Jiechi has come up with "iron cards" for the quality issues that consumers are most concerned about. According to the results of the current detection department of the Institute of Microbiology, Heilongjiang Academy of Sciences, the contents of crude fat, protein, total sugar, crude fiber, and ash in black fungus have changed, among which the protein content and ash of the corn cob matrix are significant. The content increased by nearly 10% and the other components decreased to some extent. However, the protein content of black fungus products using soybean straw matrix increased from 8.87% to 13.6%, showing significant changes. At the same time, the measurement results showed that there was no abnormality in the content of heavy metals and pesticides in the black fungus produced as a substrate for cultivation of corn cobs, corn stalks, etc., which were in compliance with the relevant national standards.
