USA Develops Biosensing Technology to Detect Food Toxins

The chemists of the USDA Agricultural Research Service Center have recently developed biosensing technology. With this technology, it is possible to detect heat-toxins in foods such as ham, milk and eggs. It is reported that biosensor technology developed by American scientists mainly uses staphylococci and surface plasmon resonance (SPR) to detect toxins. SPR utilizes light-reflecting metal films, to which toxin and anti-toxin antibody molecules attach. When these molecules adhere to the surface of the film, they change the path of light refraction, and the change in light intensity can be monitored by a light sensor to confirm how much toxin is contained in the food sample. According to reports, biosensing technology can detect several bacterial toxins in a single food sample. Scientists can display, detect, and confirm various chemical residues in foods such as veterinary drugs and pesticide residues through the screen.
